Podrumi Vukoje, one of Trebinje’s most prominent wineries in southern Herzegovina, was founded in 1982 when Radovan Vukoje’s parents opened a restaurant and began producing wine. With 25 vintages behind him, Vukoje planted Žilavka in the historic Carsko (Imperial) vineyard in Ušće at the confluence of the Trebišnjica and Sušica rivers — a site declared as a “grand cru” for for Žilavka in 19th century by the Austro-Hungarian monarchy. The site is organically farmed with the help of sheep. Today, the winery manages 30 ha across two locations, combining modern winemaking techniques with traditional ageing in deep underground cellars.
